After a one-month closure and $2 million later, the Sandestin Hilton's Seagar's Prime Steaks and Seafood restaurant re-opened to fanfare Feb. 5.
The Golf and Beach resort's general manager Gary Brielmayer said with other capital renovations taking place on the resort, they felt it was time to do the same at Seagar's.
The award-winning restaurant, located on the first floor of the Sandestin Hilton, was closed for 30 days during the renovations.
Changes guests might notice begin at the entrance, where the resort has tried to install "a stunning sense of arrival."
The entrance now offers drama with flame and waterfall features welcoming guests to the grand new front entrance door.
Inside, visitors might note a change in color palette from darker shades to lighter, more beachy shades of blues, greens, platinum and sandy hues set in contrast to traditional Brazilian cherry and mahogany accents.
The lounge area also received a facelift with a redo of its focal point: the fireplace, which was raised and is now flush with the wall instead of the raised exposed hearth.
A new private dining area with exposed glass, new lighting, upholstery, and carpeting was added.
A semi-private wine dining room for 16 people joins Seagar's original wine room, and its smaller private-label wine room for two.
The menu featuring New York-style USDA prime beef, seafood such as halibut in season, and the restaurant's signature dish of flaming bananas Foster prepared tableside did not change, said Breilmayer, but new, innovative ways of ordering are in place.
The restaurant now offers custom cuts, allowing guests the opportunity to order steaks to spec, including thickness, weight, and temperature.
Once you've decided on your dish for the evening, no guessing is needed as to what wine pairs best with that dish. Seagar's is the first restaurant in the area to now offer an iPad for ease of ordering and menu/wine ordering, which is brought to your table.
Executive Chef Dan Vargo said, “This renovation is focused on offering the best possible cuisine and service in an amazing new atmosphere that is truly inspired and elegant.”
Seagar's is a AAA Four Diamond Award restaurant.
The 150-seat steakhouse boasts a 600-label-wine list, which is consistently honored with Wine Spectator’s Best of Award of Excellence.
