‘Taste the difference’ with Idyll Hounds Brewery

Idyll Hounds Brewery has yet to brew their first beer, but already has a huge following. That probably has something to do with the men behind the brews — Frasier Hansen and Shawn Sherman.

“People believe in our beer because they believe in us,” Hansen said. “They know what kind of people we are and the standards we have. We already have businesses and restaurants signed up to carry our beer before we’ve started brewing.”

Working out some technical difficulties with their new equipment, the Idyll Hounds team hopes to start brewing beer “as soon as possible.” With the anticipation building around town, the men are working hard to bring their high-quality beer to the people of South Walton.

“We’re really taking our time with this so we do it right,” Sherman said. “We’ve set a really high standard for ourselves and want to deliver clean, fresh, delicious beer. We want to brew beers that we love to drink, and educate the palettes of local people to different styles and new flavors.”

The passion for brewing beer was obvious as Sherman and Hansen enthusiastically described their hopes for the future of Idyll Hounds.

“Even though beer has four basic ingredients, there are endless possibilities,” Hansen said. “The experimentation of brewing craft beer is exciting. We can’t wait to brew hoppy beers and stouts with high-alcohol content and bold flavor. Our beer will definitely stand out from the crowd.”

The Idyll Hounds team said they’re working hard to make sure their customers can “taste the difference.” That means double-filtering everything they can and being extra cautious with the cleanliness and freshness of their product. They’re using 100-percent recyclable materials to can their beer, intentionally being both eco-friendly and beach-friendly.
