HAM BALLS

(Barbi Carroll, founder Mission Love Seeds)


2 1/2 lbs. ground smoked ham

1 lb. ground chuck

3 eggs, beaten

3 cups graham crackers, crushed

2 cups milk

Mix ingredients. Use ice cream scoop to form balls and place on cookie sheets.

Sauce

2 cans tomato soup

2 cups brown sugar

2 tsp. dry mustard

Mix ingredients and pour over ham balls and bake for 1 hour at 350.

ARTICHOKE CHICKEN

3 cans chicken, (3 cups) drained and chopped

3 small jars marinated artichoke hearts, drained and chopped

1 cup Parmesan cheese, fresh

1 cup mayonnaise 

Garlic pepper, to taste 

Mix ingredients well. Spray 10 x 12 pan. Bake at 375 for 30 minutes. Serve with Scoops or crackers.

CREAMIEST PIMENTO CHEESE

1 (8 oz.) pkg. cream cheese, softened

2 cups shredded extra-sharp cheddar

1/3 cup mayonnaise

1 pinch garlic powder

1 (4 oz.) jar diced pimentos, drained 

Beat the cream cheese at medium speed with an electric mixer until creamy; add cheddar cheese and continue beating until light and fluffy. Beat in add cheddar cheese and continue beating until light and fluffy. Beat in mayonnaise and garlic powder; stir in pimento. Cover and chill for at least 1 hour. Serve with crackers or make sandwiches and cut into triangles or squares.
