SANTA ROSA BEACH — After 14 months of preparation, The Perfect Pig Grill and Fish House opened the doors to its third location in WaterColor.
Vickie Miller, matriarch of the brand, said her family founded the restaurant in Seagrove Beach in 2012.
After opening the second location at Gulf Place Town Center in 2015, the Millers thought they had put down The Perfect Pig's last footprint, Vickie said.
However, when another opportunity presented itself, they couldn't resist.
"This was just kind of a fluke," Vickie said. "We're entrepreneurs at heart."
The Perfect Pig operates under the slogan "Praise the Lard," a spinoff of Jeff Miller's past work as a pastor, his daughter Shelby Miller said.
To give each location its own identity, all menus are different except from a few core items, Vickie said.
"It keeps it fun for the chefs to be creative, but also gives our guests an opportunity or a reason to visit all three," she said, adding that their brisket is aged 52 days before being smoked.
The Millers said providing high-quality meats is a staple of the brand, and they use a variety of vendors and get products locally when they can.
"We love local vendors, but with what we do there's not always that option here," Shelby said.
The WaterColor location is open every day from 7:30 a.m.-9:30 p.m.
The Millers said it is The Perfect Pig's last location. Patio seating will be installed soon.
They also hope to expand beyond catering to include delivery to nearby areas.
"We feel like we started the business at a good time, (and) we're kind of growing with the community," Vickie said.
